Anyone else a little bit sick of sandwiches? I’ve pulled together 5 of my favourite picnic ideas to share with you all which are healthy, taste amazing and are simple to make when you’ve got the kids at home:
1 – Buddha salad bowls – pick and choose your protein, vegies, carb, healthy fat and then top with some seeds and a lush dressing. The salads are basically limitless in your choice as there are so many options. I often just use up stuff from the cupboard for these too – cannellini beans, kidney beans, tuna, etc
2 – Frittata – this is my fave one but there are soooooo many options here and they taste lovely cold as well as hot. The one I’ve shared is a Joe Wicks one and the mozzarella makes it so lush.
3 – Rainbow Quinoa – the recipe is for cous cous but I change that for a pack of pre-made quinoa. Credit to Pinch of Nom for this one. Because it serves 4 you can actually make it last for multiple lunches too which is always a dream – I’m all about efficiency!
4 – Falafal and Hummus Wrap. Such a simple one but literally cover a wrap with a couple of tbsp of hummus, add some salad leaves, tomato, cucumber and any other veg (grated carrot, peppers, etc) and then add 3 ready made falafals. Top with a sprinkle of pomegranate seeds and then a drizzle of pomegranate molasses (love this stuff!!)
5 – Roasted Pesto Cauliflower. Another extremely simple one. Chop the cauli into pieces, cover in pesto and olive oil and roast for 30-40 mins. I love adding pine nuts and cherry tomatoes to give it a bit extra. This also works well as a side dish for dinner with some poached/roast chicken or a salmon fillet.
